You can eat incredibly well and make a significant contribution to saving the planet. Celine Steen’s uplifting No-Waste Save-the-Planet Vegan Cookbook shows you how with delicious recipes and practical advice.
Plant-based foods have a dramatically lower negative impact on the environment than meats and animal products, as hundreds of studies have revealed. If you are a vegan and eat plant-based foods only, chances are you know this already. If you are a vegetarian or an omnivore, you probably have heard that this is one of the many reasons—quite aside from the ample health benefits of eating more plants and plant products—for adding more plant-based meals to your weekly routine.
In the pages of this inspiring and eminently practical book you will discover:More than 100 earth-friendly, utterly delectable recipes, from splendid soups, substantial sides, and glorious salads to vibrant main courses and even sweet desserts, that leave no unusable waste behind and use all the parts of the produce we have grown or boughtPractical guidance on how to shop for and eat local produce whenever possible, even when you live in a cold climate with limited crops nearbySurefire tips on how to save, store, and cook the parts of plants that you might be throwing out nowAdvice on how to buy and store food with little to no packaging—and zero non-recyclable, non-biodegradable packagingImagine how good you will feel by upping your game at dinnertime and at the same time reducing your food-related carbon footprint as far as it will go.

GETTING STARTED IN YOUR VEGAN NO−WASTE KITCHEN
One of the main messages I want you to take away from this cookbook is to use recipes only as guidelines. Not everyone likes the same levels of spice or has the chance to include gluten or soy in their diet, and so many people don’t care for Brussels sprouts the way I do. So, tweak carefully, but most importantly, have fun being creative and making changes.
Each recipe comes “equipped” with a little no waste–related tip to help you on your way to wasting less food, water, and energy—be it in the kitchen, garden, or anywhere.
Recipes are marked with icons to highlight those that have the potential to be free of soy (SF, as in soy-free, provided all ingredients used are certified soy-free); free of gluten (GF, as in gluten-free, provided all ingredients used are certified gluten-free), and, finally, those that take less than 30 minutes of preparation and cooking time together (FF, as in fast-forward).

THE VEGAN NO•WASTE KITCHEN
On average, Americans toss 41/2 pounds (2 kg) of garbage every day. Multiply that by about 7.8 billion (the number of people living on Earth at the time of writing) and you get a painful reminder of why right now is the time to do our part to reduce waste. Clearly, I do not know what your path toward cracking open this cookbook was. Are you a seasoned vegan looking for ways to make the most of your food purchases? Or, are you new both to veganism and to lower food waste? So many possibilities, so little time.

BREAKFAST
Are you awake yet? Good! Then you can put your no-waste resolutions to the test even before holding a steaming cup of whatever hot beverage you like in your hand! Do not toss coffee grounds or teabags in the trash once they’re respectively brewed or steeped. They can be recycled to prevent overcrowding the trash and making nuisances of themselves in overcrowded landfills.

MAIN COURSES
Putting the plant in plant-based like never before, this chapter is loaded with ideas to put this week’s farmers’ market loot to work. Most recipes can be altered to use whatever’s in season and to suit your personal needs if you prefer x vegetable to the y used in such-and-such recipe. I readily admit it was a bit of a challenge to work without access to the local farmers’ market due to the coronavirus pandemic and make do with the somewhat boring offerings from the supermarket instead. Most of us are more spoiled than we know (or care to admit) to usually get to cook with a far better produce selection.

SIDES
Sides are such a great way to bring variety and extra bulk to a meal, especially when you can finally go back to the good old times when guests popped by unexpectedly around mealtime. I aimed for recipes that are packed with flavor and fun, so boredom has no room in the equation. Because we’ve had enough of that during confinement, I bet you’ll agree.

SOUPS AND STEWS
Ah, soups and stews. The poster children for no-waste, extra-delicious comfort food. Packed with veggie scraps a little past their time, these steaming hot bowlfuls are nothing but lifesavers. (Except maybe in summertime when triple-digit temperatures are an everyday occurrence.) Always gaining in flavor and overall awesomeness a few days after preparation, they make such nourishing quick meals paired with crusty bread or crispy crackers.

DESSERTS AND SNACKS
You’ve reached the end of the meal, yet still have room for a little something-something to take the edge off that lingering hunger, or possibly make a bad day a little more bearable? This chapter’s mission is to solve either of these issues, while attempting to reduce waste of any kind in your kitchen—be it by making the most of every single part of seasonal fruit, using the rest of the nut butter jar, or getting the last drop from the bottle of plant-based milk or kombucha.
No waste, just perfectly great taste.
